Mason Jar Salads

Cobb-Style Salad Jar with Good Foods Creamy Ranch Yogurt Dip.

Cook Time: 17 minutes

Ingredients:

● 1 lb bacon, chopped
● 4 large eggs
● 1 pkg Good Foods Creamy Ranch Yogurt Dip
● 2 plum tomatoes, seeded and diced
● 8 slices deli turkey, chopped
● 1 cup shredded cheddar cheese
● 1 large head romaine lettuce, chopped

Directions:

1. Place eggs in a small saucepan. Cover eggs with 1-inch of cold water and bring to a boil. Cover and turn heat off. Let eggs sit in water until desired doneness is reached, about 9-10 minutes. Transfer eggs to a bowl of ice water to stop the cooking process. Peel, dice and set aside.

2. Cook bacon in a skillet over medium heat until browned crisp, about 5-7 minutes. Transfer to a paper-towel-lined plate to drain. Set aside.

3. Into four jars, evenly layer Good Foods Creamy Ranch Yogurt Dip, tomatoes, turkey, reserved bacon, reserved eggs, cheese and lettuce.

4. Cover and seal each jar with lid and store in refrigerator.

5. When ready to eat, shake jar to distribute ingredients and empty into a serving bowl.

Greek-Style Salad Jar with Good Foods Tzatziki Style Dip.

Cook Time: 25 minutes

Ingredients:

● 2 cups quinoa
● 4 cups water
● 1 pkg Good Foods Tzatziki Style Dip
● 1 large cucumber, diced
● 2 plum tomatoes, seeded and diced
● 1 (15-oz) can chickpeas, drained and rinsed
● 1 cup crumbled feta cheese
● 1 large head romaine lettuce, chopped
● Chopped fresh dill, for garnish

Directions:

1. Combine quinoa and water in a small saucepan over medium-high heat. Bring to a boil. Cover and reduce heat to low. Simmer until all water has been absorbed, about 15-20 minutes. Remove from heat and let sit covered for 5 minutes. Fluff gently with a fork and set aside.

2. In four jars, evenly layer Good Foods Tzatziki Style Dip, cucumber, tomatoes, chickpeas, reserved quinoa, feta cheese and chopped romaine lettuce.

3. Cover and seal each jar with lids and store in refrigerator.

4. When ready to eat, shake jar to distribute ingredients and empty into a serving bowl. Garnish with dill and serve.

Taco Salad Jar with Good Foods Avocado Salsa.

Cook Time: 6 minutes

Ingredients:

● 1 tbsp olive oil
● 1 lb lean ground beef
● 1 (15-oz) can black beans, drained and rinsed
● 1 pkg taco seasoning mix
● 1 pkg Good Foods Avocado Salsa
● 1 small red onion, finely diced
● 2 plum tomatoes, seeded and diced
● 1 cup shredded cheddar cheese
● 1 large head romaine lettuce, chopped
● Freshly chopped cilantro, for garnish
● 1 lime, cut into wedges

Directions:

1. Heat olive oil in a skillet over medium heat. Add beef and cook, breaking up into small crumbles, for 8 minutes until cooked through and beginning to brown. Drain any excess fat.

2. Add black beans and taco seasoning and stir to combine. Remove from heat and let cool.

3. Into four jars, evenly layer Good Foods Avocado Salsa, beef mixture, red onions, tomatoes, cheddar and chopped romaine.

4. Cover and seal each jar with lids and store in refrigerator.

5. When ready to eat, shake jar to distribute ingredients and empty into a serving bowl. Garnish with cilantro and lime wedge and serve.
